Healthy gluten-free recipes
Living a gluten-free lifestyle doesn’t mean you can’t eat tasty food that is healthy! I’ve collated some of my favorite healthy gluten-free recipes all with a little something extra to make it that every bit more delicious. So whether you are after healthy gluten-free recipes for dinner on a budget or the best healthy gluten-free treats, read my article to find out some recipe gems.
Gluten-free banana pancakes
Everybody loves pancakes and there’s nothing better than making your own pancakes at home! It is best when you use over ripe bananas for that extra-sweet taste! This recipes makes 20 mini pancakes and your kids/sweet tooth will love you for this!
- 3 ripe large bananas
- 4 eggs
- 2 tbsp of coconut oil
- ¼ tsp of baking powder
- Chopped nuts
- Handful of granola
- Low-fat yoghurt
- Maple syrup (if you feel a little naughty!)
Crack all of the eggs into a mixing bowl then add the baking powder and whisk the ingredients well.
Mash the bananas lightly in another mixing bowl but take care not to mash them too finely as you will want the pancakes to have chunks of bananas.
Pour the egg mixture into the mashed bananas and stir the ingredients together.
Heat the coconut oil in a frying pan on a medium heat. Ladle the pancake mixture into small portions into the pan once it is hot. Cook the pancakes until they are golden brown on each side.
Serve with your chosen extras and enjoy!
One pot Spanish chicken
Some days, it is so hard juggling being a businesswoman with being a mom and dishes like this Spanish-inspired makes life so much easier! For a real Spanish-inspired kick, buy some authentic Spanish Chorizo sausage.
- 4 chicken thighs
- 1 roughly chopped onion
- 1 tsp paprika
- Half a lemon juice
- 75ml gluten-free stock
- ½ tbsp olive oil
- 5 pieces of thickly sliced chorizo
Mix all of the ingredients into an ovenproof dish and season well. Preheat the oven to 375°F and place the dish in the oven.
Bake the one pot dish for at least 45 minutes so that the chicken is cooked and golden colored.
Roasted mixed vegetables
Roasted mixed vegetables require minimal effort and are great served with any dish. I advise eating them with the ‘One pot Spanish chicken’ as they are such a great healthy gluten-free alternative to carbs like pasta.
Preheat the oven to 375°F then chop all the vegetables and mix together in an ovenproof dish. If you want to avoid using olive oil, coat the vegetables in the leftover stock from the ‘One pot Spanish chicken’ is a great alternative. Season well with salt, pepper and parsley.
Place the dish in the oven and cook for approximately 45 minutes. Flip the vegetables halfway through the cooking time and take out the oven once they are tender.
