Gluten-free Blueberry Bran Muffins

1 – 1 ½ cups of gluten-free oat bran
1 cup 2% milk
½ cup unsweetened apple sauce
1 egg
½ cup honey
½ teaspoon vanilla½ cup rice flour
¼ cup tapioca flour
¼ cup potato starch
½ teaspoon xantham gum
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt

1 – 1 ½ cup blueberries
Olive oil spray

Preheat oven to 375 degrees and spray muffin tins with olive oil spray. Mix together oat bran and milk and let it stand while mixing together other ingredients. In a large bowl whisk together apple sauce, egg, honey and vanilla. In another bowl sift together flours, xantham gum, baking soda, baking power and salt.

Add the wet igredients to the dry ingredients and stir until combined. Add the bran/milk mixture until blended and fold in the blueberries.

Scoop into the muffin tins evenly and bake for 16 minutes.

Makes 12 muffins
